I never have my dog off leash around other dogs, but I did have an incident where she ran out my door and attacked another dog.
What did I do?
I took responsibility for the incident, paid the vet bill, and took my dog to a trainer/behaviorist to work on her issues.
I spent over a year having a REALLY difficult time getting the incident out of my head. EVERY DAY. I was afraid to walk my dog because I knew what my dog was capable of doing.
I'm STILL building up my confidence after the incident. It hit me HARD. But I am getting better and my dog gets walks and I accept her for who and what she is. I deal with it and I've built my courage up and have decided NOT to live in fear of my what my dog "could" do.
My dog needs NO ONE but her humans. NO ONE. I am her world. NOT other dogs.
Would I choose to willingly adopt another dog aggressive dog?
Probably, IF I FELL IN LOVE WITH THE DOG, sure. This isn't "Would I buy a black car or the exact same car, but in white?". No, it's not as simple as do I want a black car or a white car. Falling in love with ANYTHING isn't that simple. And dog aggression, imo (and it's only MY opinion) isn't as unpredictable or as dangerous as human aggression.
Like my trainer said, I'd rather have a dog that was rock solid with humans, but dislikes other dogs, than to have a dog that's sketchy with humans but LOVES other dogs, if I had to pick.
My dog didn't come to me dog aggressive. Not sure exactly WHAT triggered it, but yes, it basically happened over night.
It can happen that fast. IT CAN, and IT DOES.
Does ANYONE prefer to own a dog aggressive dog? Uh, I don't know anyone that would PREFER to own a dog aggressive dog. But no one is a fortune teller. No one knows what their dog will become.
