I have salmon filets in the oven, and some brown rice cooking--now I need to come up with something else to add to it!

Whenever I am in doubt, I always add some broccoli or california blend (broc, cauliflower, carrots) as a side..........seems to go with darn near everything, LOL

I miss having salad fixings and fresh veggies on hand ......there's so much waste with just me . I do keep cans of whole tomatoes . I enjoy both chilled and hot . Shoot , now I'm hungry for some baked scalloped tomatoes and I don't have the ingredients !

Oh I bet so Grammy. I cheat and buy the bag of salads sometimes, and as soon as it's opened it starts to go bad...........gotta be eaten FAST.

You know the stores should start marketing some little bags of single salads or salad for two!

I usually hit the salad bar and buy just what I need ....but if I don't feel like it that night .... I pass . I am hungry for a chrisp wedge of Iceburg lettuce with my homemade Thousand Island dressing ....

Shake n' Bake drumsticks with stove top stuffing, green beans and carrots. Should be yummy!
I haven't had shake-n-bake in YEARS! Probably when I lived at home and my mom made it! Sounds good :)

I threw a head of cabbage, a gob of fresh green beans, a bell pepper, 10 red potatoes, an onion, and 2 lbs of polish sausage in my big pot. Sort of a green bean stew..........and it was YUM-MAY!

I hope my 19 year old doesn't get home and wipe it out cause I want some for leftovers at lunch tomorrow! LOL

I haven't had shake-n-bake in YEARS! Probably when I lived at home and my mom made it! Sounds good :)
I'm on a bit of a shake n' bake kick right now. Throw in some extra seasoning and you can really have fun with it. Last time I used it I threw in some Montreal Chicken Spice, and this time it was garlic. Lots of garlic ;)

Shake and Bake is soo good.

get really thin pork chops (boneless) add shake and bake and cook... yummy!

I had pork chops tonight actually! (Not shake n' baked though, just seasoned).

Cheesy scalloped potatoes (or au gratin depending on what you call them where you are) and bean/carrot medley on the side.

I roamed the grocery aisle today , but nothing appealed to me ( taste or price wise ) ! Luckily I have 1/2 strip steak , I bought 2 mushrooms , cottage cheese and those singles veggies . I would kill for a slice of prime rib ( rare Au jus ), baked potato and Caesar Salad !

We had appetizers! LOL..........cheese & crackers, summer sausage, onion rings, and tequila lime chicken wings! hahahaha

What a most bizarre mix......but everyone enjoyed nibbling :D

I made myself an omlett last night, and oh my god it was SO good. =) My parents had kale, and that like the worst thing you can make me eat, so this is what I made:

-I pre-cooked some pasta (About a cup of pre-cooked pasta per person)
-Eggs
-Olives
-tomatoes
-onions
-dried tomatoes
-parmasan
-salt and pepper to taste

1) chop everything first! lol
2) sautee the onions along with the dried tomatoes.
3) put in eggs and scramble (or scramble them before you put them in, which ever you perfer)
4) throw in the noodles.
Add salt and pepper to taste and ENJOY.

Even though it only takes like 15 minutes and really doesn't ask for cooking skills its SO GOOD!

A great, no-fuss roast

My family loves this, and of course there are many variations. I use a large crockpot.

I put any roast (we love a good blade pork roast) in the crockpot in the morning, pour 2-3 cups of any good lightly sweet wine over, set to low, add a few potatoes and cook all day. About 20 minutes before dinner I add 5-6 cloves of fresh garlic through my garlic press, salt & pepper to taste. Sometimes I thicken the sauce with a little flour or corn starch. I usually serve it with a salad. (A professional chef once told me that fresh garlic or tomatoes should not be added until the last 20 minutes or less or they will turn bitter.)

My husband and sons don't like traditional stew or most cooked vegetables, so this is a great alternative. They do like salads. I experiment with different wines. I also experiment with different spices. I will often add a pinch or two of cloves. This is a real flavor enhancer. Another addition I use in the fall is pumpkin, either canned or fresh, fresh goes in from the start, canned can be added later.

Tonight's menu: Homemade beef stew over freshly baked (bread machine) bread :)

There is snow on the ground............thought this would be a good body warmer :D

One of my all time favorites..........it's in the top FIVE!

Don't laugh.................

TUNA NOODLE CASSEROLE!! I know, most of you will say YUCK, but I love this stuff and I will probably eat too much :D

I bake it with lots of cheese and crumbled cheap potato chips (the kind with lots of salt and grease) all over the top...........OH MAN! I just made my tummy gurgle in anticipation :D

My Mom made the best !!! The nice chunk tuna , celery , onions in a white sauce ,,,,topped with buttered French bread cubes , then baked until nicely browned and served over noodles . I swear that tuna doesn't taste the same anymore ! Canned salmon is a nice substitute .

I'm going to make bbq pork ribs tonight. If I have any spinach, I'll make that and some rice, too. Otherwise carrots and broccoli

That sounds tasty! I have a couple racks of ribs in the back freezer......Hmmmmm, maybe tomorrow :D

Tonight I am once again taking the easy way out and making hot roast beef sandwiches with cheddar cheese sauce (similar to Arby's but WAY better), I also toss some green chilies in my cheese sauce for a little added flavor.
