I make amazing lasagna. It's the one thing that I KNOW how to make without a recipe. I love this recipe. It's made with cottage cheese, AND you don't have to cook the noodles first, which is nice. The extra moisture in the cottage cheese helps cook them I think.

Brown 1 lb turkey sausage in garlic and whatever other spices you like. Add 1 large jar of spaghetti sauce. In a 13 x 9 inch pan, layer in this order: 1/3 of the meat sauce, dry noodles, 1/2 a 24oz carton of cottage cheese, a large amount of mozzarella (I put about 1/2 lb or so), dry noodles, rest of the cottage cheese, another 1/2 pound or so of mozzarella, and the rest of the sauce. Bake at 350 degrees for 45 min to 1 hr. Let sit for about 15-20 minutes for it to "congeal" or whatever. (I usually can't wait 15 minutes... I plow right in, and it is a little runny when I don't wait for it to cool. I also tend to add extra cheese if I have any extra. I like cheese.)

I always cook the noodles first but that's kind of a pain (not just cooking but handling the wet hot noodles after). 45 minutes isn't long to cook. I should just put them in dry next time.

I'd kill for good crab legs !!!! I cut up my meat purchases last night and froze . Two nice thick new york strips into 4 pieces , a huge slab of baby backs into 4 portions and four chicken breast ! Twelve meals for about $24. Thinks I'll do my favorite chicken breast entree tonight . Last night I did ribs , baked beans and applesauce . I'm trying to eat better , but it gets so old cooking for one !:(

We had grilled BBQ chicken and veggie packs (as I like to call them) that consisted of potatoes, onions, carrots, and spices with some garlic bread.

Nothing fancy - but it was good.

Tomorrow the husband is trying his hand at making homemade Thai chicken pasta.

Tonight we're making some kind of angel hair pasta with garlic, olive oil, sundried tomatoes, and feta cheese. It's a new recipe, so hopefully it turns out well.

Over here they're called beaver tails. I was horrified when my mom bought one for me the first time.

Dinner for me tonight is popcorn and a fruit salad. Been feeling mighty uninspired today as far as fod goes.

Made wild rice soup for the weekend. It's easy and serves a Fall/Seasonal purpose.

Into the crack-pot

3/4 pound of bacon fried to a crisp and broken into tiny pieces
Fresh carrots, celery, mushroom, onion and garlic in olive oil, sauteed
drop 1/2 teaspoon of vinegar into that when it's near done...don't know why
1 can cream of mushroom soup
1/2 pint half and half cream
1-2 cans of pre-cooked wild rice
Water to your desired thickness
Salt, heavy coarse ground pepper, fresh marjoram, fresh chives, and ALLSPICE
Top with paremeasan or swiss and green onion

I am going to run out of crack-pot receipes soon. It's easy to start it at home, drive up, plug in and let them eat as they want.

Any famous crack-pot receipes....how bout a pot roast one?
