yesterday sucked food wise (I had a slice of cheesecake for dinner) so I went to the store to make SURE today was better.

Breakfast: Egg skillet (was going to be omelettes but failed) with onion, orange and green pepper and cheese, back bacon and orange juice.

Lunch is going to be shrimp (just cocktail shrimp unless I think of something to do with them) with a spinach salad (raspberries, and raspberry vinagerette).

Then homemade pizza for dinner.

I will probably have lunch in the Uni. cafe andddd Dinner will probably suck.

Last night was pretty great though. It was a really simple stir fry that took 10 minutes to make but tasted great!

Last night we just picked up a rotisserie chicken, and had that along with barbeque beans and Hawaiian rolls.

Tonight we're making New York Strip steak on the grill, with garlic mashed potatoes. Yum :D

I'm editing this. We're doing the shrimp and salad for dinner. Breakfast was too big for either of us to even consider eating lunch ;)

Tonight is white beans (with small pieces of ham) and rice, wild hog & venison sausage on the grill, and cornbread.

And tomorrow is venison roast day with carrots, potatos, mushrooms, homemade mashed taters and gravy, and homemade honey wheat bread for sopping up all the extra goodness. Don't say I didn't give anyone warning to get their butts over here in time. :D

What could be better than a home made Louisiana dinner?
LOL. I was actually trying to think of something, but nothing came to mind.

And my mom just called. She's on her way here to bring us a king cake. Mmmmmmmm!

I think we need to have a ginormous get together where all we do is drink, cook, eat, and have fun!

Mia, when you get a moment could you please post your recipe for venison roast? Got one I've been wanting to cook up but I never made it before so I want a really good recipe. Please and thanks? :D

Mia, your dinners sound wonderful. I wish we lived closer---ever tried Czech cooking? We could do pot luck. I also love to cook.

Tonite was none too elaborate, but we had Tuscan rice salad made with leftover rosemary and garlic pork loin, Krean short grain brown rice, balsamic vinegar, eggs scrtambled with Romano cheese, and a bunch of veggies. Very tasty.
