Oooo Puck... lemon pepper chicken salad???

Mom does lemon pepper chicken ( you can tell who doesnt cook in this house)

Do you have a recipe for that ? Or is just just the lemon pepper chicken cut up in a salad ?

we had homemade pizza that I cooked on my new oven ceramic baking stone. it really does taste amazing, just like a brick oven. (which I've only ever had in a restaurant) then around 7 I cooked steaks. they were a gift from my BIL, and I don't know where he gets them...but they are AWESOME. melt in your mouth. :)

Mesquite grilled shrimp appetizers followed by Mole rojo con pollo, served with Arroz con Huitlacoche and Frijoles negros. Fresh homemade corn tortillas. Flan for dessert, chilled Bohemia beer for libations (esp. following the Aggies defeat) and good friends for company. La Vida Buena!!!

What kind of stone did you get Debi? I have a couple of pampered chef stones that I LOVE LOVE LOVE!

Biscuits, cookies, pizza.........whatever, ALL taste better and never come out with burned bottoms! LOL

Well, here is how I do it...

- Perpare your salad mix how you like it, before you cook the chicken. This way the chicken will still be hot when you serve it. I like the cheese to melt a little on the salad. Also, I toss the drressing into the mix, before putting the chicken on. Again, because I like the chicken good and hot when you eat it. Tossing after you put the chicken on cools the chicken some.

- Liberally coat skinless chicken boobies with lemon pepper. For a little more zip, let them marinate for a few hours in lemon juice first.

- Olive oil in a saute pan, make sure the oil is good and hot BEFORE you put the chicken in it. This is key as you want to seal in all the goodness right away. Sear each side for like a minute, then turn the heat down a bit and cook the boobies until they are done. We like cooked mushrooms, so I cooked them in the same pan after the chicken was done.

- After the chicken is done, cut into bite sized pieces.

- Place chicken pieces (and cooked schrooms if desired) on top of salad mix in plate/bowl/serving thing of choice. Then put your cheese on top of chicken.

- Enjoy! I recommend a nice Riesling to go with this. Sweeter wines are good with tangy chicken. I really like the Yellow Tail Riesling.

I feel horrible. I have this awful craving to make the most absolutely unhealthy recipe I know--homemade macaroni and cheese. I use a bunch of different cheeses and cream to make the sauce. Then, I add a generous amount of jalapeno smoked sausage, diced.

OMG, it is soooo good. But it's so bad for you! It's death by calories on a plate! Oh, the moral struggle! Waaaah!

Puckstop, you're making me laugh so hard this morning thinking of chicken boobies!!!!

All this food is making me hungry. I have no idea what we're planning on having tonight as tomorrow we're going to start eating a little more healthy sinc we haven't been doing that since we moved to Tennessee. I may go out and get chinese or barbecue.

it's Farberware professional series pizza stone set. excellent for baking bread, too. yeah...just what I need...delicious hot bread with tons of melted butter. LOL :D

I've done that Puck with both chicken and beef strips . Tonight I'm fixing my lemon chicken dish with angel hair ......love it !

I usually grill the chicken, but put in on top of the cheese to melt it into the salad. with some homemade croutons on top. by the time I'm finished...it isn't exactly weight watchers...but still not toooooo bad. :) so...Puck...this chef in you is something new. :) Tanya has trained you right. lol

So we did go out (big surprise). We at at the Yardhouse. I had a beer and a chicken pasta dish with mushrooms and sun dried tomatoes. Plus a stack of onion rings as an appetizer.

Last night I grilled Texas Toast and buttered it !! I don't have a stone ....but my grandmother's iron pancake griddle .

LOL.... I have always loved to cook. In fact, if it were not for the crappy hours and generally arrogant co-workers, I would have chosen to be a professional chef. Really, I LOVE to cook. In college I worked at a really fancy place as a line cook. Loved the job and learned the basic techniques.


It is a lot of fun to just "wing it" sometimes. I get a idea and half the time it turns out alright.

I don't comment in a lot of the cooking threads here because, well, lets face it... I could not hold a candle to you, Gempress and some others. LOL

well..I am impressed, Puck!! love a man that cooks, and does it well. now..Dave has his token 3 dishes....but the mess he makes cooking kind of isn't worth the effort. :) (and he has this bizarre habit of leaving EVERY cabinet door and drawer open..goodness!) but he makes a mean cheese plate..so he is forgiven. lol he's also a man that can bring breakfast in bed (as long as you don't see the kitchen, it's awesome) my neice is a chef....hey.....being married to a chef or a hairdresser has always been my fantasy. :) :)
