Today is our 7th anniversary. Cash flow is a little tight righy now so I decided to make brian his favorite cake but in cupcake form. Carrot cupcakes.

Yeah. They are not pretty lol. I totally mutilated them
Getting them out of the pan. They are still mostly intact lol but they aren't pretty. The frosting is nothing to write home about either lol

On the plus side they are super moist and delicious but I won't be winning any awards for presentation lol

I told him that when he gets his treat to remember it's the tthought that counts and beauty is in the eye of the beholder lol

But this is a nice little throwback to our newly wed days when i couldn't cook anything lol

You totally should have crumbled them up and made cake pops and said they were supposed to turn out that way LOL. In fact I'm fairly certain that is how cake pops were invented.

Well you didn't ASK me, LOL.

I made cupcakes once and I'm not sure what happened, they were cool when I frosted them, but the icing would NOT stay on the cupcakes. I scraped it back off the cupcakes and started adding powdered sugar to try and firm it up... still wouldn't stay on the cupcakes. The icing just literally slid off the cupcakes and pooled all over the cupcake tray. Luckily nobody at work cares and they all demolished them anyway, but it was definitely embarrassing. Of course, not more embarrassing than when I sent out an e-mail about the cake in the break room, assuring people that despite the odd green colour of the frosting, it was, in fact, delicious, so please eat it... that's when my Cake Fail jokes started, so my Cupcake Fails were right at home, LOL.

LOL yeah I told Brian that they are actually VERY delicious despite their looks. though I advised him that if he takes one to work and anyone asks... don't tell them I made them or they are going to wonder if your wife hates you LOL

I even have icing on my upper arm... how did that happen lol

I would eat one lol. Better yummy food that looks sketchy than gross food that looks pretty. If my food is going to lie to, I'd much rather be pleasatly surprised.

well, you could always blindfold him and feed them to him... lol.

Otherwise, who cares what it looks like. It only matters what it tastes like. :)

These are handy little things ;)

I know lol but I didn't have any and did NOT think to pick any up. I don't usually make muffins or cupcakes lol it's always bread or cake. I greased up the cups though so I hoped that would be enough. apparently not :rofl1:

If you find yourself in that spot again, oil or grease the tins, then dust them with flour (or cocoa if you're doing chocolate cupcakes), just like you would a regular cake pan.

The perfectly tidy, contrived cupcakes are never as good as the lumpy, imperfect looking ones. Those look delicious. If I were at your house they'd vanish before Brian got home. Lol.
