Alright, its been a few weeks since my dog slowly stopped eating like he used to. I've taken him to my usual vet that's been around for decades, as well as a second vet, and a vet that works closely with a local clinic.

None of them found anything physically wrong with the mutt.

I've tried taking the bowl away after 10 minutes, and all that other stuff, but he'll hold out for a good 4 or 5 days without taking a bite, and then take a few nibbles of something before walking away. I don't feed any human food anymore, and he's an apartment dog, so he isn't getting food from anywhere else.

The vet wants to use an appetite stimulant as a last resort, but has anyone had experience with this or something similar? What was the solution?

I know healthy dogs supposedly won't starve themselves, but this dog seems to be fine with going hungry.

Increase in exercise maybe?

Did the relutance to eat start about the same time you stopped feeding the people food? What is he eating? He might just be bored with the kibble...you could try adding some hot water to it, that seems to entice a lot of dogs...or making up a mixture of can food blended with water for a sort of gravy and ladeling a spoonful of that over and mixing it up well.

Is he overweight? underweight? just right? Are you sure he is getting enough exercise? Either way, increase it.

An appetite stimulant should be your extreme last resort. Anorexia could be a sign of another problem.

By the way, how often have you switched foods trying to get him to eat? The more finicky you are about his food the less likely he will be to eat.
