Matisse- Quick hints needed

I have a 5 month old Terrier/Collie Mix Puppy called Matisse [bit of background info for ya there..]

Anyways, i have jus a few quick questions about training etc.. Here Goes..

1. Matisse would sometimes have an attitude problem and growl if i stroke him while he's chewing on a pig's ear for example. How do i stop this behaviour? (i know you shouldn't pet dogs while they're eating but the point is they shouldn't be nasty either)

2. He worries the heck outa me when i let him off the lead in the park and he refuses to come to me when i call him, he only does it at home if i happen to have a delicious treat for him, it seems his last resort.
How do i teach him to come back to me?
and should i be letting him off more often for practice or is there another method i could try first that is safer?

3. For some reason he doesn't quite get the whole concept of the game fetch. Yes he'll fetch the toy most of the time, but he won't bring it back to me, even when i call him! Or instead if i call him and he does decided to come over he'll leave the toy behind. Matisse prefers me to chase after him in effort to get the toy of him.
How do i teach him to bring the toy back to me?

If you can answer any of these questions i'd really appreciate it. :)

Three separate issues here.

The first is resource guarding. Buy, read and apply the lessons learned in the book "Mine: A guide to Resource guarding."

Second: You need to teach him a reliable recall. Get the DVD "Really Reliable Recall" and that will describe the protocols involved in teaching a solid recall.

Third: Not all dogs like to fetch. My sighthound loves to chase, but not to bring back.
