Lighter Note .. Need Apple Cake Recipe

I have billion cazillion's amount of Apples ( I eat them with peanut butter sliced up and my bird loves them) I'm not good with pies and I can remember eating a great Apple Cake from family get togethers. I can't find the recipe anywhere. I've even checked my cookbooks to no avail , which I was really surprised, had nothing .. only muffins and pies. Any help!

Cinnamon apple cake

CAKE:
3 c all purpose flour
1 3/4c white sugar
1 tbsp baking powder
1/4 tsp salt
4 eggs
1 c vegetable oil
1/3 c apple or orange juice
2 tsp vanilla

FILLING:
4 large apples, peeled and thinly sliced
1/3 c white sugar
2 tsp ground cinnamon

Preheat oven to 350F. Grease and flour a 10" tube pan. Combine first 4 dry ingredients. Beat eggs, oil, juice and vanilla in large bowl. Add dry ingredients, beating until smooth (batter will be stiff)

Filling; toss apple slices with sugar and cinnamon.

assembly: spread 1/3 of batter in prepared pan. Cover with half of apples. Repeat layers. Spread remaining 1/3 of batter on top.

Bake in centre of oven for 70-75 minutes, or until cake tester comes out clean. Cool 20 minutes in pan, then remove to rack and cool completely. If desired, dust with icing sugar.

I hope it works out--I really liked it when I tried it :) Make it with the apple juice--that's the way I did.

I KNOW I have another one for an apple streusel cake that is awesome, but darned if I can find the recipe!!! If I dig it up, I'll pass it along :)

LMAO you guys. I was just going to post you got a great Gal there Andrew. Anyone with a homemade recipe off the tip of their tongue, .. is a keeper! Cudo's Lorri (and Andrew) I'll let you know how it turns out.

Sound good ! My mom used to make what she called applesauce cake .... had raisons in it.
