Since I've been so busy at work, I tend to cook like mad on the weekends. I make an insane amount of food, put it in the fridge/freezer, and it feeds us for the week. I'm in the middle of a cooking frenzy right now

Outside on the smoker, I have a beautiful rack of beef ribs that has been sitting in a dry rub overnight. They've been on the smoker for about 4 hours now (using a mix of mesquite and oak wood), and have about 2-4 more hours to go.

In the oven I have a beef brisket. It's going to be cooking for quite a while--16 hours--on very low heat. Once the ribs come off the smoker, the brisket will go on for a few hours. That way, they get a nice smokey flavor to them. Then it's back to the oven to finish cooking overnight.

While the ribs are on the smoker, the veggies go in the oven. Butternut squash, sweet potatoes, carrots, mushrooms and chunks of squash. They'll be drizzled in olive oil and lightly seasoned, then roasted until tender.

A beautiful pot of chicken and dumplings is simmering slowly on the stovetop. Chicken with all the veggies one could want. The homemade dumplings go in last.

Once the chicken and dumplings is done, I have a thai stir fry to do. The fixings are ready and waiting in the fridge. shrimp, tofu, a ton of asian veggies, cilantro and plenty of chilis for that famous thai heat.

My house smells so incredibly good! I'm getting so hungry just sniffing all this stuff. *DROOL*

That sounds great! How do you cook without gorging while you do it. I cant even fix a sandwich without eatting half of the makings before it goes together.

That sounds so good. I'm off to work (if you can call it work:D ), I'll be gone about 5 hours and I'm trying to decide what to quickly gobble down before I go. Now I ONLY want what you're having...:( :(

You make me miss having a working stove, Gem! Leaving meat on a grill or in a smoker here is folly, as Kharma and Shiva are both adept at stealing from a hot grill or smoker when your back is turned :eek: Kharma has even rogued stuff from my electric skillet while it was cooking! And didn't get burned!

My boys fortunately haven't figured out how to open the smoker. But they do insist on "guarding" it when I'm cooking with it. Can't have the food stolen, now can we?

So I'll be there about the time the ribs are done...do you like potato salad?

I've got sausage/apples/sweet potato casserole in the oven...super tasty, but doesn't quite compare...

My mom does that too...you know cook like crazy on Saturday and then freeze it...BUT it is not as good as yours!!!!

3 medium sweet potatos, peeled and sliced
2 cups sliced and peeled apples
1 lb of sausage (I like the maple syrup flavored kind)
3 cups mini marshmallows
1 c sugar
1 tsp. salt
1 tsp. cinnamon
2 Tbsp cornstarch
1 Tbsp butter

Fry up and crumble sausage
Place potatos, apples and sausage into buttered 13x9 baking dish; layer with marshmallows. Mix sugar, salt and cinnamon. Sprinkle over marshmallows. Mis cornstarch with 1/2 cup water until smooth; pour over all. Dot with butter. Cover with tinfoil and bake at 350 degrees for 1 hour.

This is also something you can make ahead of time and put in the fridge until ready to be cooked.

Men, this looks delicious..Thanks for the recipe...I'd try this at home, and I'm sure my pet dogs would surely love me more because of that..I put them in a diet for 2 weeks, and this could be another switch in their appetite..

Ohh, you should have seen Sawyer trying to sneak his nose closer to my plate tonight...I ate in front of the tv instead of the table tonight.
