I have a few in mind, but I would like to have some Chazzer input also
What I Want:
Medium to Medium High Energy
Low DA in breed
Not a huge barker
Most Coat types are fine, but I want to stay away from professional grooming
At least Tolerent of a ditzy cat
At least a starter agility prospect
30-75lbs
Some off leash reliability

What I don't want:
A dog who treats everyone like their best friend, a little aloofness, please
A dog who is very territorial/gaurdian type
Breeds that are likely to end up on BSL or banned breed lists, as I rent. Later in life there will be time for that
A pushed in face (I can't spell the correct term :p )

I already know that I don't care for the retriever type personality, and after fostering Ms. Jenna-B, I'm pretty sure that terriers are a little more then I care to take on.

What breeds do you guys suggest? I really like both herding breeds and sighthounds, but it would be cool to learn about some others.

Whippet was my first thought, though they are a little lighter than your range I believe.

Herders and sighthounds would fit your criteria, except that sighthounds aren't known for off leash reliability and a barking/DA isn't at all uncommon among herders.

Sporting group dogs might be a nice option. Setters, spaniels. They need a little more grooming, but not necessarily professional stuff. I don't know enough about individual sporting breeds to tell you the differences.

Spaniels might do you well. And I know of a spaniel mix who needs a home right now. ;)

I would say a Bedlington Terrier (they are less terrier-ish than a lot), but the grooming would be a problem.

A Toller fits your description really well... aside from the "not a retriever person" part. I don't find them to be very much like other retrievers, though. I'd recommend meeting a couple and seeing what you think. :)

short haired dogs with double coats take a ton of grooming. My char-pei husky mix has that and she sheds 24 seven. The Dalmation is the same.

I think the bajenzi has the requirements you are looking for with quiet and aloof, but I don't know anyting about them other than that. I think they have that constantly shedding double coat
