Im not a huge fan of alot of covers. But there are a few I really love and think improve on the song. Like these.

Cake, I Will Survive is hilarious and well done.

Johnny Cash's Personal Jesus is cool.

You know what cover irritates the hades outta me these days? That stupid chick Gwen Stefani's redo of "It's My Life". Talk about messing up a perfectly good tune.

Perhaps the most unusual cover I've heard and seen (it was on TV) was Neil Young singing "All Along the Watchtower" a Jimi Hendrix song. A bit bizarre but I still liked it.
