I get tickled at the way the guys at LaCarreta always call Charley 'Primo' (cousin). It's pretty much the only place he'll go out to eat. They have the BEST fajitas del mar . . . big, succulent scallops and shrimp.

If we go on Sunday, they bring us our Negro Modela in a regular glass . . . no alcohol's supposed to be served on Sunday . . . And they make the best salsa tomatilla. The tamales are out of this world too . . .

I am soooooo sick of my own cooking . . . .

mmm.... favorite recipes. Too many to pick just one! I loooove cooking so I love finding new ways to prepare stuff for the guys. I really like my mom-in-laws homemade tomatoe sauce and salsa. I learned from her how to make both after I got over her "know it all" attitude and her banter on my inability to care for her son  no really, she is an awesome mom-in-law just hard to take sometimes if you don't know her well... ANYWAY her spaghetti sauce is out of this world and thanks to her mine isn't so bad either. The salsa I improved apon by adding 3 different kinds of hot peppers and some spices that were a little too much for her but just right for Tim and I. I canned it last year and still have some stored up on the canning shelf that should just last until this years tomatoes come in ! SOOO excited. It's pretty simple, and I do it by sight, a couple cups of tomatoes cut up, some onions (a few medium chopped up in the blender), a few jalapenos, a habenero, a few green peppers, lots of cilantro, some black ground pepper, vinegar (helps keep the food fresh in the jar) , some salt, a long chinese frying pepper? I think that was what I threw in anyway, just went down the row in the grocery store and found some hot peppers. (I grew my own habeneros but not too much else grew last year. ) pretty much cook until boiling, put in jars, wipe lids, put lids on jars with twisty lid on top, put in canner and bring to boil in the canner for 10 min. , let sit overnight to seal, eat right out of the jar on taco chips if you're not canning :)

my favourite thing to cook and eat is my dads own recipe "rice and raisins"
its basically puding rice, lots of milk, lots of carnation milk and raisins. it takes about 2 hours to make but is so worth it. my dad used to make it every sunday after home made soup and crusty bread.
i make it about once a month and when i do i make enough to freeze to last a week!!

my other favourite is macaroni cheese

I like about everything except Mexican. Cooked for soooooooooo many years, I'm cooked out.! One dish I did for my family that EVERYONE liked and one I liked to do because it's soooooo easy is ...Six Layer Dinner....Oiled 2 qt. Casserole, layers are : 2 cups raw potatoes, 2 cups chopped celery,2 cups raw ground beef,1 cup sliced onion,1 cup minced green pepper, 2 cups canned tomatoes. Season each layer with salt and pepper (total 2 tps.salt/1/4 pepper. Garnish with green pepper slices (rings). Bake 350 for 2 hours. 6 servings. A good one to do ahead and pop in oven when busy.

I'm a big fan of Brasilian food. A friend of mine is from Brasil and his mom makes the best stuff. She makes a cheesy shrimp dish that's one of my favorites. We also have a Brasilian restaurant here that serves a meal with 4 meats grilled 12 ways. It's amazing.
