Don't Shoot the Dog by Karen Pryor and Culture Clash by Jean Donaldson seem to be highly recommened.

A few other good ones -
How To Teach A New Dog Old Tricks by Ian Dunbar
The Power of Positive Dog Training by Pat Miller
Outwitting Dogs by Terry Ryan

This one helped me BIG TIME with my basset hound, Waylon. http://hop.clickbank.net/?nathan111/agkatz . When all of the books on basset hounds (3 I tried) failed, This one did it.
