How are you supposed to correct/train a behavior when you AREN'T THERE TO SEE IT?
By creating it as a default behavior, a behavior that doesn’t require your presence or a cue. This is what Emily (kikopup) explains in the counter surfing video posted above by Greenmagick.

You teach a dog that counter surfing doesn’t work and eventually they don’t put effort in to it. Trick is, you have to teach it in a way that the dog makes the choice without outside influence, without knowing he will be reprimanded or punished for it. That’s the thing about *self* control, it has to come from within, the dog has to actively choose -on his own- to not take the food/resource/whatever.
