Cast iron cookware...

Howdy Folks!!!! Time allowing, I have a passion for cooking, in particular, using well seasoned cast iron cookware (Lodge & Griswold) over an open fire. Any of you folks use such cookware? If so, what's your "special" dish? Mine is peach or apple cobbler prepared in a Dutch oven---it is NOT for individuals on a diet!!!

forget about mine...I'm coming over for apple cobbler. MY FAVE!! however, I only make pineapple upside down cake in cast iron. it IS the only way! :) :)

I wish I could afford cast iron cookware! Nothing beats it for long, slow cooking. I have dreams of owning a large dutch oven one of these days.

The only thing I have a large cast-iron skillet. My specialty in it is a pan-fried potato side dish that I cook at barbecues, over an open fire: diced potatoes, onions, garlic, bell pepepers, mushrooms and cilantro, sauteed until brown and tender.

I only use cast iron. Do you mean to tell me that there is another type ? lol. I have skillets that are as old as I am and wont use teflon lined pans.

Cast iron is my favorite cookware. I have a fair number of Lodge pieces as well as those handed down from my grandmother. Like Aussie, I do not use coated pans. Besides leeching their coating, they can change the taste of foods cooked with citrus or tomatoes. Teflon is disgusting, and the few pieces I have purchased in my life landed in the garbage pail fairly fast.

I know. I HATE nonstick pans! But guess what....most of mine are nonstick. My well-meaning MIL bought me an entire set of them. As a result, I have only 3 pieces of cookware that I use regularly. But I'm too cheap to justify buying an all-new set of non-nonstick cookware. :p

don't know if anyone else is like this, but my grandma NEVAHHHHHH washed her cast iron. she only wiped them out. she also never washed her baking pans (bread ones in particular) with any type of detergent...said it ruined them. :) I don't use detergent on my cast iron skillet...Grandma would never forgive me.

:yikes: No NO NO you never wash a cast iron skillet with soap NEVER.
Hot water rinse and re oil if needed but never soap. I use the wipe method too and if it is well seasoned and treated right you never should need to wash them. Once a year I throw mine into a camp fire and completely burn them to smooth them out again and re oil them and yummy good cooking. Same as having a well seasoned grill. ,

Mine are sooooooooooo old !! The outsides are horrible .... I should toss in a fire too !

I have two of Nanny's cast iron skillets - no make that three, counting the little 6" one. A regular sized one and the huge one she used for frying chicken. They're perfect for cinnamon-pecan sticky buns, among all sorts of other things . . . sawmill gravy, fried apples, fried potatoes, frittatas . . . I have her mother's cast iron corn pone bakers too.

I really love the multi-ply stainless cookware my Dad traded a survey for for me for a lot of things. Between the two of us, my Dad and I have a VAST array of kitchen gadgets and cooking utensils, lol!

You know my daughter will not use cast iron and neither will my daughter in law. Sad. After all the years of seasoning my skillets have and they will most likely end up in the trash after I am gone. Sighs. I am so happy to find that there are more people who use them.
I find it rather funny that people worry about cancer so much and yet will cook with teflon even when it is peeling and leaving that chemical in your food lol.

Fritatas!!! Corn bread!!! Cinnamon sticky buns!!! Y'all are making me hungry!!! I make Frijoles Borrachos slow-cooked over coals in a Dutch oven that are quite, quite tasty, though, ahem, the post prandial "gastric communication" brings to mind the campfire scene from Blazing Saddles!!! None of my cookware has been exposed to detergent either---never had any ill-effects.

We are a dying breed, we cast iron people. Years from now our descendents will complain that the recipe they got from us just "doesn't taste the same". Daaaaaa.

Howdy Aussie!!! What a shame your gal dislikes collection of cast iron cookware; I consider it a family heirloom that your great, great grandkids could've enjoyed. I don't have any children but my nieces have expressed their wish to inherit my vast collection.

Heheh . . . from the beans or from the unwashed cookware? ;)

When I make beans, I do a soak with baking soda, then rinse and do another soak. Really cuts down on the after-effects. Beano works very well too.
