Black-eye peas, anyone?

I haven't had black-eye peas since leaving the south...don't really like them. but I'll have a big chunk of that cornbread! we always have had the tradition of pork roast, sauerkraut, smoked sausage, hot dogs...baked together and served with mashed potatoes. I have a beautiful rolled pork roast that is extremely lean. we love this dinner. my kids told me yesterday that it's the one dinner they don't miss..LOL I am using my hambone (that I left tons of ham on) for navy bean & ham soup, which I do serve with cornbread. I'm craving that soup! but that will be made on Wed, when our frigid air is to arrive. love hot soup when it's extremely cold outside!

Now I can almost smell the preparation of the black bean soup .....green peppers and onions with garlic simmering in olive oil !!!! Heavenly !!!

We had Hoppin' John (Black beans, sausauge, tomatoes,and chicken broth), bbq spare ribs and cornbread. No collards for me though.

I did fix some black eyed peas. They turned out okay - with a liberal dose of habanero sauce. The kale greens were excellent. Instead of cooking them for a long time I fried some bacon and ham fat in a skillet with some onions, a couple of teaspoons of sugar and plenty of pepper, then threw in the fresh kale and let it cook down some and added some cider vinegar and stirred everything to scrape the bottom and coat the greens.

We had blackeyed peas and rice on New Year's Day, and we had the leftovers tonight. Very good. We don't have it often, but it's something we like alot.

My leftovers were great !!! As to greens, I love spinach and swiss chards ---- young dandelion leaves , but should try others . My folks grew beets and young beet greens are great too !! Love fiddle heads but hate to top my ferns . Must experiment more !!

I love mustard greens and turnip greens. Also cabbage.

I've never had cooked spinach except mixed in a casserole, and raw in salads.

I guess the people on the farms in our area only grew mustards and turnips. I grew up eating the vegetables from my grandparents' and uncle's farms.

I've never had or been around kale either. I've always heard of collards but never had the opportunity for them either. I would think they would have grown in my area.

YUCKY! I had never had them before, but my mom made them, ad I tried some.... GROSS!!!!

My mom was the only one who liked them.


SHe made them with Ham, Black eyed Peas and corn bread....

SOOOO GROSS!!!!
