There are 10 essential amino acids and 12 non essential amino acids.

What are they and what roles do they play in a dog's body?

Amino acids are the building blocks of proteins. A string of amino acids all folded makes a protein. Enzymes are proteins, and they are responsible for pretty much all the 'actions' that take place at the bio molecular level.

Essential amino acids are ones that the animal can't make and must ingest. non essential ones can be synthesized.
