I'm making Honey Broiled Scallops
Ingredients

1 POUND SCALLOPS
3 TABLESPOONS LIME JUICE
1 TEASPOON VEGETABLE OIL
1 TABLESPOON HONEY
1 TABLESPOON SOY SAUCE
¼ TEASPOON GINGER


Directions

COMBINE LIME JUICE, OIL, HONEY, SOY SAUCE AND GINGER. ADD SCALLOPS (THAT HAVE BEEN RINSED AND CONNECTING TISSUE REMOVED), TOSS TO COAT. COVER AND REFRIGERATE FOR 1 HOUR, STIRRING OCCASIONALLY. REMOVE SCALLOPS FROM MARINADE. THREAD SCALLOPS EVENLY ONTO 4 SKEWERS. PLACE SKEWERS ON A SHALLOW BAKING PAN THAT HAS BEEN SPRAYED WITH NON-STICK COOKING SPRAY. BROIL 4-6 INCHES FROM HEAT SOURSE FOR 2-4 MINUTES PER SIDE UNTIL OPAQUE THROUGHOUT. SERVES 4.


Do you guys think it'll be enough with just some veggies and rice? Or should I make some chicken or something with it?

I'd go with Uncle Ben's white/wild rice and orange or grapefruit plus avocado & green onions on fresh leaf type lettuce . Yum !!! I'm hungry !

Wonder if that marinade would work with shrimp?

Tonight we are having a Ranchero Beef Taco bake with Spanish rice--well, DH is--It think it might be a bit spicy for the gall bladder...

DH just got back from Japan where he was served such delicacies as fried whole minnows, octopus, and squid. He said it was all very good except for the squid, which had weird goo in its head.....

Tonight is a simple, yet large, garden salad. Added in some boiled eggs, ham, and croutons, and it's good to go!

I'm making tuna steaks that have been marinading all day, as well as rice and vegetables.

I so can't wait until this diet is over and I can have lasagna again.

tonight will be a Michelina's Budget Gourmet Macaroni & Beef .... never had it and it may be Ollie's dinner tomorrow ! I'm picky !!

We had q good one tonight. Ham with honey and thyme glaze, cheddar scalloped potatoes, and fresh asparagus. It was tasty.
