Meatloaf? Add some grated carrots, chopped onion, garlic, other seasonings and form it, put it into a crock pot to cook all day.
Meatballs and tomato sauce, burgers, tacos...
It's a pretty lean meat so if you do burgers or something put lots of grated carrots and other veggies, or maybe some chopped bacon or something to keep it moist.
Had some awesome bison sausage last weekend, they said they cook it as low as possible for as long as possible. It was pretty darn good.
