I need an easy/tasty desert recipe

I am doing a fundraiser on Weds and am bringing deserts to sell. What's a good idea to bring? Something not too messy and that are either individual (like cookies) or can be chopped up easily into individual servings.

I was honestly just going to do a brownie mix or cookies or something but I don't know which ones are good. I want to make something people will actually like. I am soooo not a cook.

I would say brownies or muffins.... Cupcakes if you are up for icing them.

I don't have a recipe at hand though lol sorry

Make some canoli filling and mix in dried, fresh or frozen (strain out any liquid) fruit then put in tart shells.

Recipe for filling:
1 (15oz) package of ricotta (dry and strained)
1 cup heavy cream
1 cup confectioners' sugar
1/2 cup cream cheese (plain and NOT fat free)
1/2 tsp. vanilla or almond extract (I put a drop more for flavor)
1/2 tsp. orange or lemon extract (optional)

This will fill about 24 tart shells. It's super easy and quick, especially if you put the filling in a ziploc and cut off a corner to squeeze out.

Also you can make these the night before and refrigerate so they are ready to go the next day. Use wax paper between layers and garnish as you set them out.

Cake balls are a great idea. Super easy to make, fun to decorate, no mess eating. It's a small treat, so people who are weight conscious might feel its okay to indulge in one, and others who don't care, can eat a few!

Get some store bought filo dough and make little filo cups in a cupcake tin. Bake, then fill with cheesecake filling. NOM.



Regular cupcakes are great too. I made rainbow ones for my kids' birthday party last weekend. Like these, they look really fancy but they're really simple to do:



Meringue cookies are really simple too. You can make those and advertise them as no fat. Since they have so much air they're really low calorie too which is appealing to a big demographic of people. And if you avoid cross contamination, gluten free! WIN!

Omg I wanna make rainbow cupcakes! Right now!

I make caramel brownies for holidays and birthdays a lot because everyone LOVES them! I'd make a kid-friendly desert (like rainbow cupcakes) and an adult-friendly desert like these...

2 cups sugar
3/4 cup baking cocoa
1 cup canola oil
4 eggs
1/4 cup 2% milk
1-1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 cup (6 ounces) semisweet chocolate chips
1 cup chopped walnuts, divided
1 package (14 ounces) caramels
1 can (14 ounces) sweetened condensed milk

Directions
In a large bowl, beat the sugar, cocoa, oil, eggs and milk. Combine the flour, salt and baking powder; gradually add to egg mixture until well blended. Fold in chocolate chips and 1/2 cup walnuts.

Spoon two-thirds of the batter into a greased 13-in. x 9-in. baking pan. Bake at 350° for 12 minutes.
Meanwhile, in a large saucepan, heat the caramels and condensed milk over low heat until caramels are melted. Pour over baked brownie layer. Sprinkle with remaining walnuts.
Drop remaining batter by teaspoonfuls over caramel layer; carefully swirl brownie batter with a knife.
Bake 35-40 minutes longer or until a toothpick inserted near the center comes out with moist crumbs (do not overbake). Cool on a wire rack. Yield: 2 dozen.

You could also just use a brownie mix and add the caramels and walnuts. NONE of the storebought "caramel brownies" are nearly as good as these! I buy a ton of Milk Maid caramels and melt them down. Add more caramels to make it more delicious.

Oh, and one of the best ever chocolate cakes is the very, very simple one from the recipe on the Hershey's Cocoa can! Just refrigerate it, then cut it into squares. You can even freeze it in the individual squares, wrap it, and they'll be nice even if it's warm at the fundraiser.
