Favorite use for homegrown tomatoes?

I woke up this morning with my stomach seriously GROWLING for Caprese Salad! LOL
I really contemplated fixing it for breakfast :lol-sign: I definitely know what I'm having for lunch :D

With my kitchen over flowing with fresh tomatoes, I'm wondering what I'm going to do with them all. I've been considering canning some tomato basil sauce (we love this with pasta & shrimp) but I haven't made up my mind yet.

What's your favorite way to use up an abundance of tomatoes?

I love home grown tomatoes. I'm waiting for mine to ripen still...uggg. That is so nice that you have a lot. I think your idea of canning them is a good one. In the past I've stewed them with some onion, celery, zucchini or whatever and then put them in small containers to freeze. And the ones you can get at before they go bad...yeah, sandwiches, salads, put over pasta with some other veggies, just plain along side the dinner. They're so good. Enjoy! I love cherry tomatoes and have a couple plants of those. When you're outside working in the garden, you can just graze on them right off the plant if you get hungry.:p

Second the salsa. It freezes well!

Or just run 'em through the VitaMix and freeze, that way I can do whatever I want with them later and don't have to worry about peeling -- which is great with the overabundance of cherry tomatoes.

we can't seem to get enough canned tomatoes now. I love homegrown canned tomatoes.

Tomato Sandwich on good panella bread.
Tomato Salad. -Tomatoes, olive oil, red onions, little bit of garlic salt & pepper. Don't forget to dunk bread in oil.

Roasted tomatoes are yummy.

I have a huge pot of tomato basil garlic sauce reducing on the stove right now. I'm sure my neighbors hate me 'cause it's making the whole hood HUNGRY! LOL

We played corn hole with ours last week.
That sounds messy Linda! :eek: (but fun! LOL)

It does sound wrong doesn't it? Don't feel bad Red, I live in the heart of corn country and I still don't like calling it corn hole! LOL

It's a bean bag toss game that uses 2 boards, painted however you like (I see lots of sports team paint jobs) and you toss bean bags at the hole.

Canned pasta sauce. Definitely! Tastes sooooo much better than store bought.

Its obvious you've never seen me eat tomatoes XD i could literally eat them all day
You and Tallulah, lol. She gets all the split ones. I've been keeping a basket of split cherry tomatoes in the fridge to use for treats.

Mom planted a bunch of yellow tomatoes. No one likes them but her, so we're overrun with them. Dad will eat them if there aren't any real tomatoes, but I'd rather have no tomatoes than the yellow ones. I'm thinking yellow tomato salsa -- but she'll still have to eat it herself, lol.
