Favorite super easy paleo-ish meals?

I had this whole essay in my head that was whining about how I was out of shape and had gained weight and I decided forget that. Anyways so long story short, I am grocery shopping tomorrow and I am wanting to actually buy food that I can live off of for a few days. I don't want any processed foods. I always go shop and only buy healthy stuff but have no idea how to actually you know... eat it.

Inevitably after about 2 meals I end up starving then cave and eat bad food.

So I need some tried and true meals I can make. Anyone have any favorites they'd like to share?

I don't do paleo, but I do low carb.

Chicken tenders, sliced onions and bell peppers, put it in a dish, pour enchilada sauce (comes in cans) over the top, cover with foil Bake 350 for 30 minutes. Fajitas! I mix it up in a bowl with cheese and sour cream (not paleo), and guacamole, you can slice up avocados or however you want to do it.

Raw veggies. I've started slicing up celery, cucumbers, peppers, carrots, and baby tomatoes and just eating a bunch of those as my side with lunch which is usually tuna.

Tuna.. lots of it. Canned tuna with oil and sundried tomatoes (I think Bumblebee Tuna) also tuna packets by Starkist, I like the Tuna Salad variety.

String cheese makes a good snack (not paleo)

Greek yogurt and nuts for breakfast (The Light N Fit is only 80 calories)

Again, dairy isn't paleo, but dairy doesn't give me ANY GI upset or issues so I never saw the need to remove it from my diet. Be careful though with yogurt, READ THE LABEL, I chose Light and Fit because it had the fewest carbs and sugar of any of the other Greek Yogurts.

We grill a lot too, chicken, steaks, pork chops, etc. I buy seasoning packets and marinate the meat with that.

Grilled sweet potatoes, a little olive oil, rosemary,no-salt seasoning, and honey, wrap it in foil and grill. MMM

I have this weird problem where I am nauseous if I eat too many plain vegetables. I have no idea why because I like them. I used to eat salads constantly and now I cannot eat a meal that is just a salad without wanting to gag. No matter what I put on it. :/ It's driving me crazy.

I do have some sort of food sensitivity going on, or so I suspect. I am sick 4-5 days a week with stomach problems. I THINK it's either gluten or I've become lactose intolerant. I can eat like... a slice of cheese on a sandwich and be fine. But if I drink milk or eat ice cream or something like that I will be sick the next day. But there's obviously more going on because I've cut milk and ice cream out and I'm still getting sick every day or two.

I'm so done with feeling like crap all the time.

I did go to a dietician for over half a year but her advice was just 'oh eat wheat bread and walk a few minutes a day'. Urgh... And snack ideas were like granola bars and other carb heavy type processed food. So I stopped going.

Oh and I suck at cooking btw.

For simplicity I buy a lot of those marinating packets, I'll use them for anything, meat, veggies, etc.


Most meats, if you put them in an oven safe dish and add some liquid (broth, beer, sauces, etc.) and cover them with foil you can bake then 30-40 minutes @350 and they won't be dried out and nasty.

I like taking a whole chicken and putting it in my crockpot, pouring a marinade packet over it and adding a beer and letting it go all day. The meat falls off the bone and you can use it for anything. Pot pie, sandwiches, chicken salad, taco filler.

Stirfry! Beef, pork, chicken, and whatever veggies you like. It is super easy... you can use a wok or just a regular frying pan.

I don't have a lot of money so I buy plain frozen veggies because they are dirt cheap and they don't go bad on me... I can't afford to waste food. So I pop a bowl of veggies into the microwave to thaw out while I'm cooking whatever meat I have (often chicken) and then I throw it all in the wok together and season it.

For spices I just grab whatever I feel like out of the cupboard that sounds good. Garlic, onion powder, white pepper, crushed red pepper, chipotle pepper, ginger - I have also done a "pizza" chicken before where I use oregano, basil, and parsley, then add tomatoes.

Stirfry is really really easy to cook, it doesn't take a whole lot of skill. You just get some oil hot in the pan and throw stuff in and let it rip.

ETA: What I would do is cut out all wheat for sure, corn if you can, and probably avoid rice for a while too. Stop the milk products for now. Before I cut out gluten, milk products were a possible trigger for me, but now that I'm off gluten I can eat cheese without any problems at all.
Basically no grains and no dairy for at least two weeks and see how you feel. You should start to feel better at that point. If you can go a full month without grains and dairy even better. At that point you can try adding dairy back in - only full-fat stuff, no skim milk or 2% cheese - and see how you feel. If you start having trouble again, take it back out.

For me personally I am okay with corn and rice (I still don't eat either very often though) but wheat is the definite no-no. However before I got rid of the wheat, honestly, I'm pretty sure my gut was so messed up it just didn't matter. Everything aggravated it. Now that everything has had a chance to heal I can eat corn again and not get sick whereas before it was basically 50-50... might get sick, might not... no way to know. It did take a few weeks before I really noticed a difference though. You might have a similar situation. I read an article the other day about gluten where if the body reacts poorly to gluten, it can also develop a bad response to the other foods that are in your gut as the same time as the gluten - there was a big list. So far though, the only thing that will still make ME personally sick is wheat.

You might look into The Whole 30, but I think it's a bit intimidating... however my friend is having a lot of problems and she told me she is going paleo, and wants to do The Whole 30 as her introduction to it. It does lay out the rules pretty clearly (and strictly!)

Mark's Daily Apple is where I got most of my recipes. Most of the ones I like are about meat preparation (the pulled pork recipe is to DIE for), I have a really hard time eating enough vegetables.
