I'm going with local as in where I eat in town because I don't know what Colorado's local food would be. My favorite local food from Buena Vista - Mr. Ed from the Gunsmoke Cafe. All this is stacked in order - biscuits and gravy, eggs, hashbrowns, green chili, cheese. Yummmmmm. Pueblo - Sloppers. Hands down, the best invention EVER. It's an open faced double cheeseburger smothered in green chili and extra cheese sprinkled on top. Other than that, any kind of mexican food. We drive down just for the food, Springs really can't compare. Colorado Springs - The Grump from the King's Chef diner. Again with the stacking - hashbrowns, gravy, eggs, sausage, more gravy.
