Cooking question..re: calzones

I've got the dough rising, but along with reg. pizza, I thought I'd make a couple calzones. I want to make chicken/spinach. My question is; what cheese would you put in it? Here's what I have on hand; mozzarella, cheddar, monteray jack, parmesan. I've never made these kind at home, but have had them out....just not sure what cheese they use. THANKS! :D I'm also adding mushrooms and black olives........................can you tell I'm hungry??? ;)

Ooohh! I'd shred them and mix them all up, heavy on the Jack and Mozzarella. Maybe skip the cheddar since it's got a heavier flavor than the others, but a smaller portion of it would be tasty, especially with a little bacon thrown in.

Ricotta Cheese is also a great add ! Cheddar cheese is real greasy, so watch for that.

GOOD LUCK, and we want to know how it turns out this time !

I might be a bit late on this post. Lost my internet connection at home and forced to keep up with my puter at work. :(

THANKS!! I went with the Jack and Mozzarella, with a bit of parmesan. OH MY GOODNESS.......the last one is cooking and the smell is killing me. (yep, still hungry..been too busy to eat) I wanted to have them cooked, then just heat up in the oven when Dave gets home. I have the mess all cleaned up.....I make such a huge mess when I'm cooking, no wonder I'm not that fond of it. LOL Friday's are always special, but sadly...Dave usually gets some frozen something. He is gonna LOVE these. hehehe :D

On the pizza I put all the cheeses (cept light on that cheddar, you're right Avenlee...greasy!) with mushrooms, green pepper, onions, and I even put pepperoni on (this is very rare!!! we usually eat veggie pizzas) My crust is perfecto.........I know cause now a piece is missing. hmmmmm, I'll give the chicken calzone first, maybe he won't notice. A good cook HAS to taste, right??? LOL ;)
