Favorite foods/meals/recipes?

A couple of our easy to make favorite side dishes -

Seasoned baked potatoes- slice how ever many potatoes you want in half. Put butter/margarin & EVOO or peanut oil, salt, pepper, chopped garlic and onion in bottom of baking dish & potatoes on top (sliced side down). Sprinkle some Seven Seas Italian Dressing mix over the potatoes and bake til done. I've used Ranch dressing mix, too, but we prefer Italian. To "dress" up the potatoes, after they're done baking, I flip them over, sprinkle some shredded cheese on top, then pop them back in the oven until the cheese melts. You can use pre-made Italian Salad dressing instead of the oil & dressing mix.


Seasoned Macaroni- After cooking and draining pasta/macaroni, put back in pot with some butter/margarin & the same Italian dressing seasoning used above. Sometimes I put some chopped garlic in, too, and add some shredded mozarella cheese. This is really good with chicken.

On that one I leave out the ranch and double the cream cheese, as odd as that sounds (I love ranch) I just prefer the taste. Mostly cause I hate all store-bought ranch.

Sorry if you were looking for healthy and/or real food recipes. Lol. These are my most favorite foods ever but by no means are they a regular staple for me. I can't remember the last time I had any of them, lol.

This is one of my favorites- mahi mahi with coconut rice and mango salsa. The coconut rice is amazing!

Here's one of my favorite pasta recipes:

Spinach Feta Pasta

-2 cans of diced tomatoes
-Box of penne
-Package of crumbled feta
-Bag of baby spinach
-Fresh oregano (dash)

Cook the pasta by following the directions on the box. Drain and set aside.

Take a skillet or a wok, and pour in the 2 cans of diced tomatoes. Wait until they start to boil, and turn the heat down to medium. Add in the spinach and oregano and wait until the spinach wilts.

Pour pasta into the wok or skillet with the tomatoes. You can either mix in the feta cheese or add it to the pasta on your plate.

Jessie, I kind of hate you for posting that mahi mahi recipe. :p I want to make it but mahi mahi ain't cheap!
