We are doing our annual Christmas cookie bake this Saturday, and I don't know what to make!!

Anyone have any favorites they'd like to share? Spritz cookies and gingersnaps are already covered but I think just about anything else is fair game. :p

We made 15 kinds this year!

My new favorite, which we did for the first time, are the Shimmer cookies. You need an extract that I think they only sell at King Arthur, however. Oh my gosh, so good though! Citrusy and sweet. http://www.kingarthurflour.com/recipes/shimmer-cookies-recipe

New Zealand Holly are another favorite. Super pretty and very tasty as well. Sort of a very lightly cinnamon cookie, with raspberry jam in the middle.

I love kolache cookies. I might have to go find the recipe. But it is a pastry cookie with jam. Mmm. Like these:

I know right!! Most expensive endeavor ever. :rofl1:

I keep coming back to those Rolo snickerdoodles though. Seems like the safest option, I think my family would actually find those appealing. The cake batter bars are awfully tempting too... ugh dear God how to decide!

Hot Cocoa Cookies

Ingredients:
1-1/4 cup butter, softened
1 cup sugar
2/3 cup packed brown sugar
2 eggs
1 tsp. vanilla extract
3-1/4 cups flour
4 packets instant hot cocoa mix
1-1/4 tsp. baking soda
1 tsp. baking powder
1 cup semi-sweet chocolate chips
1 cup mini marshmallows*

Directions:
Preheat oven to 350F.
Beat butter and sugars in large bowl until light and fluffy.
Add eggs and vanilla; mix well.
Combine next 4 ingredients in separate bowl.
Gradually beat into butter mixture until blended.
Stir in chocolate chips and marshmallows.
Place 2 tbsp. dough on cookie sheet. (Or smaller and reduce baking time. 2 tbsp. is kind of big.)
Bake 9 to 11 minutes. (If you bake them a little less they're gooey and chewy and awesome.)

*You need those little dehydrated marshmallows that come with hot chocolate. They're kind of hard to find, but you can buy the Swiss Miss Marshmallow Lovers and use those since the hot chocolate and marshmallows are packaged separately.

I just found these and have to try them but they look amazing!! You could probably change them into Christmas cookies by adding food coloring and flavoring in the glaze or chocolate!

Recipe: Brown Butter Cookies with Lemon Glaze (Source: Auguste Escoffier School of Culinary Arts email)

"These sweet and buttery cookies dipped in a tart lemon glaze are simple, yet scrumptious. Browning the butter before mixing adds a nut...ty flavor that takes classic sugar cookies to a whole new level. For a citrus twist, try orange or grapefruit in place of lemon.

Yield: About 4 dozen cookies

Ingredients:
For the cookies:
2 cups all-purpose flour
¼ teaspoon salt
6 oz. browned unsalted butter, room temperature
¾ cup sugar
2 egg yolks, room temperature
½ teaspoon vanilla extract
For the glaze:
1 cup powdered sugar
2 tablespoons fresh lemon juice
1 teaspoon lemon zest

Method:
* Brown the butter by heating butter in a small saucepan over medium heat until the butter solids separate and the liquid becomes golden brown and smells "nutty." You will use both the solids and the liquid. Set aside to cool.
* Whisk together the flour and salt and set aside.
In the bowl of a stand mixer, cream the brown butter and the sugar until fluffy.
* Add the egg yolks and vanilla extract. Mix together.
Slowly add in the flour mixture, mix until just combined. Add water tablespoon at a time until dough comes together.
* Divide the dough in half and roll each half into a log with a diameter of about 1 ¼ inches. Chill for 30 minutes.
* Preheat oven to 350°F and line 3 sheet pans with parchment paper.
* Slice the cookies off the log in 3/8 inch thick pieces. Place them 1 ½ inches apart on the prepared sheet pans.
* Bake 10-12 minutes or until golden, remembering to rotate the sheets halfway through baking.
* Prepare the glaze by whisking the powdered sugar, lemon juice, and zest until combined.
* After the cookies are slightly cooled, dip the top of each cookie in the glaze.See More

I make these every year, just because I like them. My best friend's mom always made them around Christmas time, which is probably why I think of them as Christmas cookies:

Brown Eye'd Susan cookies:

2 3-3/4 ounce vanilla pudding mix
2 eggs
1/4 cup melted butter/margarine
Milk chocolate wafers (baking aisle)

Combine biscuit and pudding mixes. Add eggs and butter; mix well. Drop tablespoon on ungreased cookie sheet. Bake at 350° for 10 to 12 minutes. Immediately press chocolate wafer in center of each cookie. Makes 3-1/2 dozen.

I usually make a TON of cookies, this year I don't think that's going to happen. The best ones are:
homemade peppermint patties
almond butter crescents
cream cheese cookies
snickerdoodles (and the base for snickerdoodles also turns into chocolate reindeer head cookies with pretzel antlers and cherry noses and snowmen sugar cookies)

If you want the recipes for any I can find them and type them up

Gingerbread popcorn, second batch is 'hiding' so I can get proper bags and send them to school with the kiddo.

Sugar cookies, plain and with candy canes crushed and mixed in.

gingerbread houses still have to make, one for the kids and one for a gift.

More whipped shortbread and will drizzle with chocolate

buckeyes (aka peanut butter balls)

One thing I want to try and remake is unbaked Christmas cake - my mom used to make it with the fruit and nut mixture, then graham crumbs and condensed milk to make it gooey, then it goes into a pan with wax paper on top and weight to press it down. I don't talk to my family so can't get the recipe and to be honest don't want 4 big trays of the stuff, just a taste, so I'm tempted to get a little fruitcake and mash it and see if I can create it.

Cinnamon cookies

brown sugar cookies - like sugar cookies but with brown sugar instead and lots of it so they're yummers...

not sure how much baking I'll really get to but that's the 'I really should' list. LOL Also going paleo in the new year and should be now so don't want a ton to eat up.

Russian teacakes!! My favorite ever, I'm not a huge cookie fan and even though we make a large assortment of cookies during the holidays, the only ones I eat are the russian teacakes. NOM
