I'm going with local as in where I eat in town because I don't know what Colorado's local food would be.

My favorite local food from Buena Vista - Mr. Ed from the Gunsmoke Cafe. All this is stacked in order - biscuits and gravy, eggs, hashbrowns, green chili, cheese. Yummmmmm.

Pueblo - Sloppers. Hands down, the best invention EVER. It's an open faced double cheeseburger smothered in green chili and extra cheese sprinkled on top. Other than that, any kind of mexican food. We drive down just for the food, Springs really can't compare.

Colorado Springs - The Grump from the King's Chef diner. Again with the stacking - hashbrowns, gravy, eggs, sausage, more gravy.

You do know they ship their BBQ all over the country? My sister had some shipped in for her husband's birthday.
thanks alot just what i needed to know. Now Jeremys going to demand it for Christmas LMAO. I personally love their fried chicken. He LOVES their Brunswick stew.

Where do I even start... :D

I love me some Crawfish Bisque. It's such a pain to make it, that we only do so for New Year's Day.

I also make a mean Crawfish Etouffe. And I love a good seafood gumbo (crawfish tails, lump crab meat, crab claws, shrimp, and oysters (although I don't eat oysters, but others do). I also love a good seafood stuffed potato. And a juicy, sloppy roast beef poboy. And Shrimp, Andouille, & Okra Gumbo. And fried alligator. And a good jambalaya and pastalaya (FYI: all that "jambalaya" y'all find in restaurants up north is NOT jambalaya). And some good ol' boiled crawfish, with potatoes, corn on the cob, mushrooms, and onyuns.

I could go on.....

Oh, and a great yummy bread pudding with rum sauce for dessert.
