what to do with peppers?

Our garden is going to have a ton of red and green bell peppers very soon for us to pick but I know we aren't going to eat them all at once so I was wondering how everyone deals with extra peppers. Do you freeze them? what is the best way to go about freezing them? This is the first time we've successfully grown peppers in our garden lol so it's new to me.

Now that the dogs have done away with the groundhog that broke into our yard I'm confident all the peppers will make it to "full term" lol

of course the dogs didn't get the groundhog until AFTER he destroyed my sunflower... little bugger.

When I was a kid, we always had a ton of peppers in the garden, and my mother would usually dice them and then freeze them (usually in a container about the size of a margarine tub). Then she would take them out whenever she was making spaghetti sauce or chili, etc, and dump them right in.

chop and freeze , freeze in a ziplock , so you can shake bag and the bulk will seperate and they will be easier to just use/defrost what you want out of the bag and the rest stay frozen.

chop some in strips and some in dices . hmmmmmmmmm there would be none left here , my kids are all gaga over them. congrats on the good crop!

We canned a bunch of jalapenos & banana peppers last year and I bet it would work for bells too. Well, I actually did a jar of bells but I haven't opened it yet. It was a super easy recipe and as soon as I find the canning book in the mess of moving I'll post the recipe.

I freeze them. Chop them up into chunks and strips. Bag and tag them in quart sized baggies. If I'm adding them to dishes like stir fry, I typically add them in the last few minutes so that they don't over cook and are still crunchy.

I would look into canning some salsa personally! And yeah, freeze the rest for stirfry and stuff later. So jealous! I can't wait until I get my own garden and can grow some stuff. First up on my list is berries hahaha.

You can barbeque 'em, boil 'em, broil 'em, bake 'em, saute 'em... There's, uh... Pepper kabobs, pepper creole, pepper gumbo. Pan fried, deep fried, stir fried. There's pineapple peppers, lemon peppers, coconut peppers, pepper peppers, pepper soup, pepper stew, pepper salad, peppers and potatoes, pepper burger, pepper sandwich. That's... That's about it...

Do they need to be blanched or anything before freezing the strips and cubes?

Ooooh salsa is a great idea. Definitely need to do that.

Red and green bell peppers? Well, first of all you can put them in just about anything.

Pot roasts, regular roasts, soup, salads, grill or roast with olive oil, on sausage like Seven said...

Garbage potatoes, too. If you don't know what that is, it's potatoes + anything else you have in the house....squash, peppers, onions, corn, green beans, whatever, throw it in aluminum foil on the grill or in the oven with butter and seasonings. Mmmm.

Lately I've been using them in place of bread for tuna. Make the tuna salad, scoop it into the peppers and eat it that way.

Oh, and stuffed peppers. With cheese, meat, onions, tomatoes, whatever.

Salsa. Pasta. Grilled with cheese. Fried like green tomatoes. Bell pepper soup. Tossed with olive oil, pepper, onions, cucumbers and green beans for salad. In cole slaw. Roasted, dipped, and used as munchies instead of chips. In Sour Pork with pickled cabbage. In or on every type of meat imaginable. Jelly. Lasagna. Relish. Kabobs. Fish cakes/patties. Hamburgers.

Bell peppers are the best things to grow. So many uses.

Oh yeah I'm not at a loss for what to cook them with lol but I just wasn't sure if you could freeze them or can them or how to preserve them because we won't be able to eat them all before they go bad lol

You can preserve them, can them, freeze them, pickle them with onions and cucumbers.

I'm sure you could probably pressure seal them, too, if you have one of those nifty machines.
