Wouldn't it be "Jessie has way more Pacos than I'll ever be able to afford"? Paco's would be possessive. Pacos would be plural.

This is where I would just say "Jessie has way more Paco Collars than I'll ever be able to afford", so I wouldn't have to spend five minutes turning that around in my head.

Possibly I'm over thinking this.
